2 Onions (Coarsely Chopped)
1 Red Pepper (Coarsely Chopped)
2 Sweet Potatoes (Cubed)
1 Poblano Pepper (Roasted, Seeded, & Chopped)
1 Large Can of Crushed Tomatoes
2/3rd Large Can of Chicken Stock (Vegetable Can Be Substituted)
2-3 Tbl Spoons Peanut Butter (As Thickener)
Toasted Coriander & Cumin (Season To Taste)
Hot Sauce (To Taste)
Honey (To Taste)
Salt (To Taste)
3 Tbl Spoons Unsalted Butter
Chop onions and sweat in butter in a stock pot until soft.
Add red peppers, sweet potatoes, poblano pepper, tomatoes, chicken stock, coriander, cumin, and salt to the pot.
Bring to Boil then Reduce to Simmer.
Simmer for 4-6 Minutes.
Test Sweet Potatoes to see if they are soft.
Add Peanut Butter to Thicken.
Add Hot Sauce.
